There used to be a second location way out here in the country by my house. This location was only open for a few years, but it was my go-to place for weekend breakfasts, my daily morning bagel (don&amp;#8217;t do that. it makes you fat.), and comforting dinners.&lt;/p&gt;
&lt;p&gt;They have lots of great food but all of my favorite dishes include a lentil mixture that&amp;#8217;s like a thick stew/chili. It&amp;#8217;s good by itself or over grains. Amy&amp;#8217;s also serves it in an amazing creation called &amp;#8220;Veggie Wet Shoes,&amp;#8221; which includes curly fries, lentils, cheddar cheese, and I don&amp;#8217;t remember what else. Eat it with lots of hot sauce and ketchup, and all your dreams will come true. (You&amp;#8217;ll also get fat. Oh well.) You can also get the lentils in an omelette, which sounds crazy but is awesome.&lt;/p&gt;
&lt;p&gt;Here&amp;#8217;s my approximation of this versatile, healthy, vegetarian dish. This recipe makes a LOT, so you can freeze some for later. Or cut the recipe in half. And feel free to improvise; I always do.&lt;/p&gt;
&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 large onion, diced&lt;/li&gt;
&lt;li&gt;4 cloves garlic, minced&lt;/li&gt;
&lt;li&gt;2-3 Tbsp olive oil&lt;/li&gt;
&lt;li&gt;2 carrots, finely chopped&lt;/li&gt;
&lt;li&gt;2 stalks celery, finely chopped&lt;/li&gt;
&lt;li&gt;1 tsp cumin&lt;/li&gt;
&lt;li&gt;1 tsp coriander&lt;/li&gt;
&lt;li&gt;Red pepper flakes, to taste&lt;/li&gt;
&lt;li&gt;Salt and pepper, to taste&lt;/li&gt;
&lt;li&gt;1 can crushed or diced tomatoes&lt;/li&gt;
&lt;li&gt;1-2 fresh tomatoes, diced (optional)&lt;/li&gt;
&lt;li&gt;1 c vegetable stock&lt;/li&gt;
&lt;li&gt;2-3 c water&lt;/li&gt;
&lt;li&gt;1 c dried lentils&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Instructions:&lt;/p&gt;
&lt;p&gt;Saute onion and garlic in olive oil in a big nonstick soup pot for a few minutes. Add carrots and celery. Saute until the vegetables are somewhat soft, 5-10 minutes? Add tomatoes and spices.&lt;/p&gt;
&lt;p&gt;Add tomatoes and stock. Simmer on medium heat until lentils are tender, adding water as needed. Stir frequently. Stop adding water when the lentils are soft (or al dente&amp;#8212;whatever you prefer).&lt;/p&gt;
&lt;p&gt;Puree a few cups of the stew in a food processor, then add the puree back to the big pot. This will thicken the stew. You want it to be pretty thick, not watery like soup. If it&amp;#8217;s watery, keep simmering.&lt;/p&gt;
&lt;p&gt;Serve over rice, curly fries, or whatever you want. Top with Cheddar cheese, sour cream, hot sauce, ketchup &amp;#8230; again: whatever you want.&lt;/p&gt;
&lt;p&gt;I hope you like it! &lt;p class="MsoNormal"&gt;Ten years ago in Chicago, the coolest person I knew said that Wicker Park was &amp;#8220;a little too hipster&amp;#8221; for him. New to the big city after a small town lifetime, I nodded and acted like what he was saying made sense. But I was secretly thinking &amp;#8220;Too hipster? There&amp;#8217;s no such thing. That&amp;#8217;s like saying &amp;#8216;too awesome!&amp;#8217;&amp;#8221; I couldn’t understand wanting to avoid a place that was teeming with hipsters&amp;#8212;it was my ambition to earn my hipster cred by doing time at Quimby&amp;#8217;s, Earwax, and &lt;a title="Tuman's Alcohol Abuse Center" target="_blank" href="http://www.chicagobarproject.com/Memoriam/Tuman's/Tuman's.htm"&gt;Tuman&amp;#8217;s&lt;/a&gt;. So if my cool friend didn&amp;#8217;t identify himself as a hipster, what was he then? And what did this mean for my dream of becoming hip?&lt;/p&gt;
&lt;p class="MsoNormal"&gt;The hippest thing hipsters can do is convince themselves (and others) they aren&amp;#8217;t hip. Think about it: Snooki and Toby Keith don&amp;#8217;t have to go around saying, &amp;#8220;Now, I&amp;#8217;m no hipster&amp;#8212;&amp;#8221; because they&amp;#8217;re not even close. But the cooler you get, the more you feel obliged to pass off your coolness as effortless and unpretentious.&lt;/p&gt;

&lt;p class="MsoNormal"&gt;Even though I did&lt;span&gt;  &lt;/span&gt;many cool things in Chicago and met lots of cool people, I never felt that I attained true hipness. I feel like I&amp;#8217;m still trying! Evidence of my attempts is everywhere: I have a Holga, several Moleskines, and many pairs of interesting glasses. I play the accordion and decorate my house with garage sale paintings. I collect Pyrex and vintage wallpaper. I even push the limits of quirkiness to the extreme by listening to country music and taking a condescendingly anthropological interest in evangelical Christianity. Sometimes I certainly try too hard.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;Yet I&amp;#8217;ve still been known to deny my own hipness, partly due to the self-loathing inherent in being a hipster, but partly because I know tons of people cooler than me, and I can&amp;#8217;t claim to be on par with them.&lt;/p&gt;
&lt;p class="MsoNormal"&gt;But all this recent attention on hipster hate makes me want to honestly and proudly embrace hipster culture and its aesthetics&amp;#8212;the best of which is interesting, broad-ranging, and simultaneously ironic and sincere. Maybe you&amp;#8217;ll join me as I change my outlook, proudly don my corduroys and stock my Etsy shop,* and go forth unashamed and unafraid of being called hip.&lt;/p&gt;
